Homemade Sauces

Ice Cream Sundaes anyone? Sorry I am working on my up close shots, bare with me until I have mastered this. I love photography.
Lindsey had a "Late Night" and all we had was plain ole Vanilla Ice Cream. It IS Ideal Dairy so for me it is just fine plain, SOOOOO Creamy, anyway her friend requested chocolate sauce and Lindsey wanted caramel sauce. So, what would any recipe loving mum do, but make both!! It took maybe 4 minutes, so why not?

This Chocolate sauce recipe is actually Chocolate Ganache. You can ice cakes with it, and it will harden a little, or put in the fridge and after chilled make truffles. MMmmmm with a little bit of peppermint candies crushed mixed in for a mint truffle or even Cream De Menthe extract. Oh my Goot Ness.


Since I am counting my calories, I just get plain, but plain is good enough for me. As long as it's Ideal Dairy of course! So, don't eat plain ole ice cream, add some lovin'!! Don't forget your ice water, funny how thirsty you get after ice cream. Ooh, wouldn't a fudgey, chewy brownie be good under that?
I also have to thank my friend Jessica for adding her recipe on the last comments for her cookies. I'll post them underneath so everyone can enjoy! Sounds Fabulous!

Caramel Sauce
1C Brown Sugar
1/2 C Butter
1/4 Evaporated Milk ( I used half and half) :)
Stir together in a pan over medium heat
Bring to boil stirring constantly for 2 1/2 minutes.
TA DA
Chocolate Sauce or Ganache
8 oz. Heavy Cream
8 Oz. Chocolate Chips (I use Milk Chocolate, could use any chocolate chips, pb chips, or butterscotch)
1t Vanilla
Bring cream to a light boil
Stir in choc chips and stir until smooth
For Truffles
Place in fridge until cool, scoop with cookie scoop and dip in chocolate let cool
Super Simple Gooey Chocolate sauce
1 can sweetened condensed milk
1/2 bag chocolate chips
place both in pan over med. heat stir until smooth
This sauce gets gooey almost chewy when it cools. OOOOOOO
Jessicas Cookie Recipe
Yellow Toffee Cookies
One yellow cake mix
2Tbsp water (add a little more if you have to)
2 Eggs
1 pkg brickle toffee bits
Mix together. Very thick. Bake at 390 for 9 minutes, not brown

Bookclub Party!! Yay!
In honor of Valentines Day, I made Oreos with Cherry Frosting, and Strawberry Oreos with Cherry and Vanilla frosting, Oh, and not to forget Chocolate Popcorn.
I usually do White Choc. Popcorn, but tried Chocolate today. YUMM!!
That is not blood dripping from the chocolate, it is red chocolate, but it wasn't quite mixed in yet.

Oreos
2 boxes Devils Food Cake (or Strawberry, or any flavor)
11/2 C marg. or butter
4 eggs
Mix together, and scoop onto cookie sheet. Bake at 350 for 9-11 minutes.
Frost bottom of 1 cookie with favorite frosting and smash another on top of that.


White Chocolate Popcorn
2 bags microwave popcorn
1 bag any flavor choc chip
Melt choc. chips and pour over popcorn. Dump out onto parchment and let dry.

Monday Nights Menu


Cold and snowy today. How 'bout soup. I like more stewy soups or like Rachael Ray says Stewp.

Tonight we had Potato Broccoli Stewp. That just sounds gross. Won't use that again. Anyway, bowl of hot soup and Mom's Breadmaker Rolls. Mmmmmm. Need I say more.
Potato Broccoli Soup
1 onion chopped
1 clove garlic
4T butter
1/2C flour
2 Cups peeled and diced potatoes
1 large carrot diced or chopped with the "chopper"
2 celery stalks diced
4C chicken broth
4C milk
Saute onion, celery,garlic, and carrots in butter, or oil or PAM
add 1/2 C flour and stir together
Add chicken broth and simmer until thickened
Add potatoes and milk
Bring to boil on med. heat for about 15 minutes or until potatoes are tender.
Don't add seasonings until the end. I learned from Wolfgang Puck that soups can reduce and become too salty.
I added 2T chicken bouillon and some garlic salt, S&P to taste.
Sprinkle each bowl of soup with cheddar cheese
Breadmaker Rolls
1C milk
2T butter
1 egg
31/4 C flour
3/4 C sugar
3t yeast
Heat milk and butter in Microwave for 1 minute. Place all ingredients in bread pan in the order listed. Put on dough cycle.
Divide dough into 15 pieces. 5 rows of 3. Pull of chunks of dough and shape into a ball. Place into a well greased 9x13. Brush with butter. Cover and let rise 30-40 minutes or until double. Heat oven to 375. Bake 12-15 minutes or until golden brown.
